Kuzhi Paniyaram

Idily batter - 1 1/1 cup
Onion medium size - 1 chopped
Carrot finally chopped - 2 Tbs
Green chili - 1 chopped
Curry leaves - 2 string chopped
Coriander leaves - 3 Tbs finally chopped
Oil - for making paniyaram
Coconut oil / any other oil - 2 Tbs
Salt to taste

Method :
*Heat a pan or kadai and add oil,now add finally chopped onion and salt to taste.
*Saute for 1 minute and add carrot followed by green chili.Now cook till the carrots are well cooked.when done switch of the flame and remove from fire and let it cool down.
*Mix this with idily batter.Add salt to taste,curry leaves and coriander leaves and combine well.
*Heat a kuzhi paniyaram pan and add 1/2 or 1 tsp of oil in each and wait till it gets heated.
*Now add 1 Tbs of batter in each.Cover  and cook in low flame.
*Flip when the other side gets golden brown in colour.
*Cook for other 1 minute in low flame.
*Remove from fire when done.

Oats dill leaves paratha

Onion : 1 medium size chopped
Green chilli ; 1 chopped
Dill leaves : 1/4 cup finally chopped
Oats : 1 cup
Potato : 1 medium size boiled and mashed.
Wheat flour : 1/4 cup
Oil : 1 Tbs

*Heat a non stick pan and add oil,when oil gets heated add chopped onion and green chilli.
*Now add dill leaves Saute for 1 minute and add oats.Add salt to taste mix well .
*Switch off the flame and set aside.Let it cool down completely.
*Transfer this mix to a deep bowel and add cooked potato.
*Mix well all together and kneed.Add 1or2 Tbs water if required.
*Now kneed to a soft dough.
*Make small balls and roll it using with a chappathi roller.
*Heat a tawa and cook the paratha on low flame by applying 1 tsp of oil on each side.
*Cook till parathas are well cooked.

Whole Wheat Choco chips cookies

Whole wheat flour : 1 cup
Backing powder : 1/2 Tsp
Salt :  two pinch
Egg : 1
Butter (melted) : 50g
Oil : 5Tbs
Vanilla essence : 1Tsp
Sugar (powdered) : 1/2 cup
Milk : 1-2 Tbs
Choco chips : 1/4 cup

*Pre heat the oven at 180 degree.
*Add wheat flour,backing powder and salt to a sieve.Mix well and sift the flour.Stir to blend for 1 minutes or   shift for 2 or 3 times.Keep this aside.
*Crack egg to a deep bowel and beat tiill fluffy.
*Add butter,oil,vanilla essence and sugar.Now beat till fluffy.
*Add the flour by 2 or 3 batches and fold slowly.
*If the mixture is crumbly add milk and combain well.
*Now add choco chops and mix well.
*Grease the backing tin with some oil and drop about 1Tsp about 2 inch apart.
*Press the dough slightly and flatten it.
*Back in 180 degree for 15 minutes.Back till the cookies changes its colour or as per your oven temperature.
*After backing cool them in a wire rack.

Falafel / An arabic snack

Chickpeas : 1 cup
Parsley leaves chopped : 1/2 cup
Coriander leaves chopped : 1/4 cup
Onion small size chopped : 1
Garlic cloves : 2-3
Cumin powder : 1/2 tsp
Pepper powder : 1/2 Tsp
Corn flour : 2 Tbs
Backing powder : 1/2 Tsp
Salt to taste

*Soak the chickpeas 5-6 hour.For better result soak over night .
*Wash,drain and transfer to

a blender.close the lid and pulse until they start to break down.
*Now add parsley,Coriander leaves,garlic,onion,cumin powder and corn flour.
*Close the lid and pulse until rough,course meal forms.
*Transfer this to a bowl.Add backing powder and salt to taste.Mix well
*Form the mixture into small patties.
*Place a pan or kadai, heat oil for deep frying.
*Fry the falafels.Fry until golden brown.
*Remove from oil to a paper towel.

Mackerel / Ayala Cutlets

For cooking fish
Mackerel / Ayala : 2 medium size or about 150g (cut it into small size)
Potato :1 medium size (thinly sliced)
Turmeric powder : 1/2 Tsp
Chilli powder : 3/4 Tsp
Water for cooking the fish : 3/4 cup
Salt to taste

For the masala:
Onion : 1 medium size ( finally chopped)
Ginger : 1 Tsp ( finally chopped)
Garlic : 2 Tsp  ( finally chopped)
Green chilli : 1-2  ( finally chopped)
Turmeric powder : 1/4 Tsp
Garam masala : 3/4 Tsp
Coriander leaves : 2Tbs  ( finally chopped)
Salt to taste
Oil : 2 Tbs

For coating:
Egg : 1
Bread crumbs : 1/2 cup
Oil for deep frying

*Add the fish pieces, potato,Turmeric powder,Chilli powder and water to a wide bottom pan or a clay pot.
*Mix well and cook in low flame till the fish and potatos are well cooked.
*Water should be fully dried before switching off the flame.
*Remove from the fire and wait till it completely cooled down.
*Now remove the bones of fish and  mash the mash the potato.
*Now combain fish and potato together and set aside.
*Heat a kadai on low flame and add oil .Add chopped onion and salt to taste.saute till colour change.
*Add ginger,green chilli and garlic and saute till row smell goes off.
*Now add masalas like turmeric and garam masala ,also coriander leaves.Now cook for other one minutes.
*Now add fish and potato mix and combain altogether.switch off the flame and set aside.
*Once the mixture has cooled down roll into desired shapes.
* Crack egg and beat well.Now dip the in egg and roll it in bread crumbs.
*Deep fry in golden brown in low flame.

Chicken mayo sandwich


Chicken breast : 150g
Pepper powder : 1Tsp
Salt to taste
Mayonnaise : 1 1/2 Tbs
Small size onion : 1chopped
Bread white or brown : 4 pieces

*Clean the chicken cut it into small pieces and cook by adding salt and pepper powder.
*Cook till the chicken are well cooked, remove from fire and wait till it cools down completely.
*Transfer this to a blender or u can shred with ur hands  and transfer to a wide bowl.
*Now add chopped onion and mayonnise and combine all together.Check the salt add if needed.
*Using a knife slice of the hard edge of the bread slices.
*Spread the prepared mixture on bread.
*Now place one piece of bread over the other.
*After spreading all the bread pieces heat a non stick pan and lightly toast the bread on both the sides.

Oreo cheese balls

Oreo cookies : 12nos
Cream cheese softened : 60g
Semi sweet chocolate bar (optional)
Semi sweet white chocolate bar  (optional)
Melted butter : 1 Tbs
Milk : 2 Tbs

*Place the oreo on a foil paper or zip lock bag.
*Crush using wooden roller or in a blender.
*Roll until the oreos are fine crumbs.
*Transfer this to a bowel.
*Add softened cream cheese and mix until well blended.
*Rub some butter on the palm and roll in between palms to form into balls.
*Refrigerate or freeze the balls until firm.
*Melt both chocolate in mirowave.
*Add milk to the chocolate and mix well.
*Using a skewer dip the balls in chocolate ganache.
*Place them to foil paper or baking paper.
*Now decorate with some white chocolate.

Payyoli chicken fry

Chicken : 1/2 kg(cut it into small pieces)
Ginger garlic paste : 1 Tbs
Salt to taste
Lemon juice : 1 Tbs
Kashmiri Chilli powder : 1 1/2 Tbs
Turmeric powder : 1/2 Tsp
Pepper powder : 1/2 Tsp
Corn flour : 2 Tbs
Shredded coconut : 1 cup
Curry leaves : 3 spring

Green chillis : 4
Oil for deep frying

*Wash the chicken using salt and lemon juice.
*Marinate the chicken using ginger garlic paste,salt,lemon juice,chilli powder,turmeric powder,pepper powder and corn flour.
*Marinate for 30 minutes or overnight.
*Heat a kadai with very low flame and deep fry the chicken pieces untile done.
*Remove from from fire when chicken are cooked.
*In same oil fry coconut,green chilli and curry leaves.
*Fry till coconut gets golden brown.
* Remove from oil and drain in a kitchen towel.
*Now mix this with fried chicken.
*Serve hot .

Hummus / Hummus using sesame seeds

Cook chickpeas : 1cup (200 g)
Garlic : 4 cloves
Reserved liquid from cooked chickpeas : 3/4 cup
Lemon juice : 1 Tbs
Olive oil : 3-4 Tbs
Oilve oil ; 1-2 Tbs for garnishing
Sesame seeds : 2Tbs
Sugar : less than 1/4 Tsp
Salt to taste

*Soak the chickpeas for 3 hour or overnight and cook untile soft.
*Add cooked chickpeas to a food processor followed by garlic,Reserved liquid from cooked chickpeas,salt,sugar,lemon juice and olive oil.close the lid and blend for 10 seconds.
*Open the lid and add sesame seeds and puree until smooth.
*Transfer to a bowl and garnish with oilve oil and some chickpeas.
