Idiappam

Here comes a breakfast recipe.Its easy to make when u have instant rice flour.I always use Nirapara idiappam podi.Its very soft like sponge,when made with Nirapara idiappam podi.In kannur(My home country) we call it as nool puttu.

Also you can prepare the rice flour at home.Wash and soak raw rice(Pachari) for few hours. Drain well and allow it to dry completely.Grind it to a fine powder and dry roast it.

Ingredients

Fine Rice Flour – 1 cups
Water – approx 1 cups
Salt – as needed
Grated Coconut – 1/4 cup
Thick Coconut milk – 1 tsp (Optional)
Oil – as needed

Accessories Needed:-
Idiappom Press
Idli Mould
Method:-

Boil water in a pan,adding required amount of salt and 1 tsp oil into it.Pour the boiled water little by little to the rice flour,stirring in between,until it is ready to make into a smooth dough.

Allow it to cool for a while.When it is half cooled,knead it with your hand into a smooth dough.Lightly grease the idiappom press and the idli mould to prevent sticking.Add 1/2 a spoon of grated coconut into each idli plate.Spoon some dough into the idiappom press,close the lid and squeeze the dough onto the idli plates in a circular motion.
Garnish each idiappam with a little more grated coconut.


Now place the idli plates in a steamer and steam it until done.Allow it to cool for a while and carefully remove the idiappams to a serving bowl.


Complete Meal Pasta

Ingredients

Macaroni- 1 1/2 cup
Carrat-1
Capsicum-1
Spring onions leaves-1 bunch
Green peas(frozen)-few
Garlic chopped-1 tbsp
Tomato-1
Egg-1
Cooked chicken-1/2 cup Chili ketchup-5 tsp Pepper powder-1 tsp(U can increase or decrease according to ur taste)
Salt -to taste
Oil-2tsp


Method

1.Boil macaroni in suffucent water.Add salt and 2 tsp oil.When its cooked drain and keep aside.

2.In a pan added carrot and capsicum.Remove from the fire when its half cooked.

3.When its half cooked add Green peas.

4. In a bowl, beat eggs well.Add the eggs to pan, and mix well.

5.In a non stick pan heat 2 tsp oil. when heated add garlic and saute for a minute.Now add tomato and pepper powder.

6.Then add cooked chicken,egg,cooked vegetables,salt,Chili ketchup and macaroni stir for few minutes till the macaroni is fully blended with the chopped veg. remove from flame and add the spring onions.

Chicken Sandwich(Two layers) And Award

On week end all will be at home…Evening every one needs some snacks for tea…Today I had some breads in my kitchen so I decided to make some sandwiches.My hubby’s favourateIts very simple and needs to spend few minuts for it.





Ingredients

1.8 slices Bread.
2.Few of Lettuce Leaves
3.A few slice of Tomato4.A few slice of Cucumber
5.1 Chicken Breast meat cooked and minced
6.3 - 4 tablespoon of Mayonnaise
7.2-3 Tomato ketchup
8.Salt & Pepper to taste

Directions

1.Add mayonnaise,salt, Pepper powder and Tomato ketchup to the minced chicken.And mix well.
2. Now mix lettuce leaves and cucumber.
3. Spread some ketchup and mayonnaise on the bread
4. Now place some chicken mix in one layer and place a bread on the top.
5.Now place the lettuce leaves,cucumber and tomato and put one more bread on the top.
6. Toast the bread.Have it as soon as made.

Fish molee



Ingredients:

Pomfret/King Fish/ Fish Fillets- ½ kg
Turmeric- 1/4 tsp
Red chili powder-1 tsp
Lime/Lemon Juice-1tbsp
Salt- ½ tspOil- 3 tbsp


For the Stew

Onion- 1or 2.
Green chilies- 6
Ginger-1/2 piece
Garlic- 1 clove
Tomato-1or2 tomato
Fresh Ground Pepper- 1tsp
Salt to taste
Thick Coconut Milk – 1/2 cup
Very thin coconut Milk- 1 cup
Curry leaves- 1 sprig
Coconut oil – 1 or 2 tbsp


Preparation:

1. Preparing the Fish: Clean and slice the fish.Dry the fish and marinate with the salt, chili powder, Lemon Juice and turmeric for at least 15 minutes outside the refrigerator.

2.Heat the oil in a pan till medium hot and fry the fish fillets for some minute or just until it changes color and firms up.Drain onto paper towels and keep aside.

3.Heat oil in a pan and sauté sliced onions, garlic and ginger, curry leaves, continue stirring for a minute. Add the second extraction of coconut milk, lime juice and salt to taste.So when it starts to boil, add the sliced fish and cover. Cook on a slow heat for about 5-10 minutes.

4.When done, add the tomatoes, Curry leaves and pepper; check taste and slow down the fire. The tomatoes should not get cooked and the pepper added in the end gives it an Extra taste.

5. Ensure that the heat is absolutely low, before adding the thick coconut milk. Do not let it come to full boil after that. You could continue simmering for another 5 minutes.

Fish(Ayala) Fry In Rava


Ingredients
1. Ayala -3
2.Rava(Semolina) -5 tsp
3.Red chili powder -1 tsp
4.Turmeric powder-1/2 tsp
5.Salt as per taste
6. Lemon juice – half of one
7. Oil

Method
1.Make a paste of turmeric powder, Red chili powder, Salt, Lemon juice.If needed add 2 tsp of water to make a fine paste.
2. Apply to the fish pieces and marinate for 1 hour.
3. Heat oil in a pan. Roll the fish pieces on rava and fry on both sides till done.

Parippu And Muringa Curry


INGREDIENTS


1. Toor Dhal - 1/2 cup

2. Drumsticks -8

3. Onion -1

4. green chillies -3 or 4

5. curry leaves

6. Ground coconut - 1/2 cup

7. Turmeric powder-1/4 tsp

8. Salt to taste

9. Mustard seeds 1tsp

10. Red chilly - 3 no
11.Cumin seed -1/4 tsp


PREPARATION


Pressure cook Dhal adding chopped onions along with it.


Add drumsticks, green chillies,turmeric powder and salt to dhal and cook for 10 minutes or until done.


Finally add the ground coconut and cumin seed.

when it starts to boiling turn off the fire.


Heat oil in a pan and sputter mustard seeds,add red chillies and curry leaves to it and add to the curry.

Best with rice.


Chicken Chukka


Ingredients:

Chicken -1 kg
Finely sliced onions -3
Ginger/Garlic paste -1 tsp
Green Chilli cut lengthwise -3
Coriander leaf finely chopped
Curry leaves -1 stem
Tomatoes pureed 2-3
Oil -4 tbsp


For Masala:

Red chilli powder 1 tsp
Turmeric powder 1/2tsp
Peppar powder-1 /2tsp
Chicken masala -1 tsp
Red food colour 1/4 of tsp
Salt as reqd

Directions:

• Wash the chicken thoroughly.
• Heat oil, add ginger, garlic, onions and salt fry till golden brown.
• Once above is done add all the masalas except food colour. Fry it with above for few seconds .
• Add tomatoes puree, green chillies. Fry till all the masalas is mixed well
• Add chicken & mix with masala for about 5-6 minutes
• Let the chicken cook till tender. See that the water is completely dried.Now add food colour and cook for 2 minutes.
• Garnish it with green coriander leaves and curry leaves.
• Serve hot.

Fish(Ayala) Cutlet


Ingredients

Fish : 3/4gmsOnion chopped : 3nos.
Green chillies chopped: 4nos
Garlic chopped finely : 5 nos. (bigger size)
Ginger chopped finely : 1 medium size
Potatoes boiled & smashed : 3nos
Pepper powder : 1 teaspoon
Coriander leaves : as per your taste
Garam masala: 1/2 teaspoon.
Turmeric powder – 1/4 tsp
Chilly powder-1/4 tsp
Oil : 4 table spoon.
Bread crumbs: 1/2 cup
Egg: 2nos
Oil for deep frying : 2 cups

Preparation

1.Boil fish with little salt,turmeric powder, chilly powder, Ginger, Garlic till they are cooked.

2.Pour oil in a pan, as the oil becomes hot put onion, ginger, garlic & green chillies and half fry. . You have to stir it continously.

3. Now add pepper powder & garam masalas. Fry well.Add smashed potatoes & mix well .Turn off the gas &spread some coriander leaves. if u need salt u can add as per the taste.

4.Now add fish to it & mix well. Dont add water to it. Make this mixture dry.5.Let it be cool for some time then make small round balls . Make any shape of ur choose.

6.Take a bowl beat the eggs and in another plate take bread crumbs. Dip this balls in the egg mixture & then put bread crumbs on both sides of the cutlet.

7.Now deep fry the cutlets in oil.

8.Serve hot with tomato ketchup.

Upma Recipe ( Hubby Special)


Ingredients:


1- cup rava / semolina
1- onion, finely chopped
1/4 - cup chopped carrots
2 green chillies, chopped
1" piece ginger, grated
A few curry leaves
1/2 - tsp urad dal /uzhunnu parippu
1/4 -tsp mustard seeds / kaduku
2 -tsp oil
3 -tsp dalda ghee
Salt to taste

Directions:

1.Heat oil in a pan and add the mustard seeds let it splutter,

2.Now add urad dal and curry leaves. When the dal turns golden brown add the onions, green chillies and ginger. Fry for 1 mins.

3. Now add the chopped carrots. Mix well. Add about 3 cups water and cook until the vegetables turn soft.Add dalda also.

4.Add salt and mix well. Then lower fire to sim and add the rava little at a time, stirring constantly to avoid lumps. Continue to cook and stir for another 5 mins.

5. Remove and serve hot.

Spicy Chicken Fry


Ingredients for Chicken Fry

• Chicken – 1/2 kg (cleaned and cut into medium pieces)
• Black pepper - 1/2 tbsp
• Chilly powder – 3/4 tbsp
• Garlic pods – 1/4 tsp
• Ginger – 1/4tsp
• Turmeric powder – 1/2 tsp
• Salt - As reqd
• Curry leaves - 1 sprigs


Method of cooking

1)Clean the chicken and cut into medium pieces.

2)Grind black pepper, chilly powder, garlic, ginger, turmeric powder and salt to taste to marinate the chicken and keep it in the fridge for 4-5 houres.Best for over night

3)Heat the oil and fry the chicken pieces until it is cooked and slightly brown.Add curry leaves befor 5 minuts from removing from fire.

4):- Chicken Fry is ready to eat.


:- You can have chicken fry as snack or with breads.

Mathanga(Pumpkin) Pachadi



Ingredients:


· Chopped Pumpkin – 350grm
· Grated coconut – 1/2 cup
· Green chillies(roundly cut) - 3 nos
· Cumin seeds - ¼ tsp
· Curd -1 cup
· Mustard seeds - 1 tsp
· Red chilly - 2 nos
· Water - ¼ cup
· Curry leaves - A few
· Salt - to taste
· Oil -2 tsp

Preparation Method:
· Cook Chopped Pumpkin in water along with salt .Mash half part of the cooked Pumpkin with a spoon. Rest keep as it is.
· Grind the coconut and Green Chilly to a fine paste.
· Add this paste to the cooked Pumpkin .
· Add Curd to the mixture and stir well.
· Heat Oil in a Pan.
· Add Mustrard seeds allow to Splutter.Now add Curry leaves,2 tsp of grated cocunut and Red chillies into it.Fry them untile the coconut change its colour to brown.
· Add this to pachadi and mix well .


· Combination: Serve with Rice.

Mutta Roast


Ingredients:


Egg -3 (Hard boiled)
Onion -3 (Sliced thinly
Ginger paste -1/2 tsp
Garlic paste -1/2 tsp
Tomato sauce -1tsp
Tomato -2
Curry leaves- A few
Chilly pdr -1 tsp (I used Kashmiri chilli powder)
Chicken Masala -1/2 tsp
Turmeric pdr -1/4 tsp
Oil -3 tsp
Salt –As reqd
Coriander leafs-A few

Method

· Boil eggs and remove the shell.
· Heat oil in a pan. Add onion, curry leaves and saute well.
· When it turns into golden colour put tomato sauce, ginger garlic paste, salt and 3 powders.
· Mix well and saute for another couple of minutes.
· Add sliced tomato and water. Cook well and make it into a fine gravy.
· Add eggs to the gravy.
· When the gravy starts to thicken, cover the eggs with the masala.
· Transfer it to a serving bowl.
· Garnish with Coriander leafs and curry leaves.

Gulab Jamun



Ingredients:

o 1 cup milk powder (Try Nido milk powder or the one which is available)
o 1/4 cup flour
o 3 tsp unsalted butter
o 1/4 cup room temperature milk
o 1/4 tsp baking soda
o 1 cup sugar
o 2 cups of water
o 1 tsp ground cardamom
o Rose water 2 tsp
o Vanilla essence(optional)

Directions:

o In a medium saucepan put sugar and water. Mix it in medium heat until it starts boiling.
o When it starts boiling put it on simmer.
o In a medium bowl mix all the dry ingredients of Gulab Jamun. Add butter and carefully mix it with dry ingredients.
o Now add milk and make the dough until smooth.
o The dough should be very soft.
o When its done let the dough rest for 20 or 30 minutes.
o Now make small small balls.
o Heat a pan with a thicker bottom to heat the frying oil.
o When the oil is heated put the balls one by one.
o U can put 4 or 5 at a time.
o Fry them until it changes its colour to brown.
o When all the balls are ready drop them to the syrup.
o you can either keep Gulab Jamun overnight in the refrigerator or you can serve it in 6-7 houres.

Spicy Chicken Chilli


Ingredients:


Cooked Boneless Chicken-500grm(Chopped into small pieces)
Onion - 2 big(Chopped into very fine pieces)
Tomato - 2 medium sliced into small pieces
Green chilly - 2 split length wise
Garlic - 4 cloves (Chopped into very fine pieces)
Ginger-1 1/2" size
Turmeric Powder - 1/4 t spoon
Chilly Powder – 3/4 t spoon
Coriander leaves - 1 strip chopped
Curry leaves-1 strip
Cooking oil – 2 table spoon
Salt - To taste


Method


1.Heat some oil in a pan and fry the onions till light brown in colour add salt to taste.
2.Then add green chilly,garlic,ginger and tomato and stir for around 10 minutes.
3.Then add Chilly Powder, Turmeric Powder and finally curry leaves and stir for around 1 minutes.
4.Then add cooked chicken and mix well.
5.Keep it on low fire for about 10 minutes.
6.Remove from fire and Garnish with Coriander leaves.

A best combination with chapatis and parathas.
