Chilli Chicken And Happy Easter

Ingredients
Chicken pieces – 1kg
Capsicum (diced into cubes) – 3 medium
Spring Onions (chopped) – 1/2 cup
Diced Onions – 3 medium
Ginger (cut into small pieces) – 1 tbsp
Garlic (chopped into small pieces) – 1 tbsp
Red Chilly Powder -1 tsp
Hot and Sweet Chilly Sauce – 5 tbsp (You can use the tomato sauce,but i always prefer hot and sweet chilly sauce)
Soy Sauce – 3 tbsp
Black pepper Powder -2 tsp
Salt – As required
Oil – As required

For Marinating
Egg – 2
Cornflour – 5-6 tbsp
Red Chilly Powder – 1/2 tbsp
Soya Sauce – 1 tbsp
Ginger Paste – 1/4 tsp
Garlic Paste -1/4 tsp
Salt – As required
Water – Optional



Preparation Method
1.Make a marinade of the above ingredients. It should be in the form of a thick paste so that the chicken pieces get coated well. Add the chicken cubes and marinate it for an hour. You can place it in the fridge.
2.Heat oil in a pan and deep fry the chicken pieces. Keep it aside and allow it to cool.
3.Heat oil in another pan and saute the onions, ginger and garlic till the onions become translucent.
4.Next add capsicum pieces and saute for 2 minutes.
5.Add the spring onions and saute for a while.
6.Reduce heat and stir in 1 tsp chilly powder,hot and sweet red chilly sauce, soy sauce and salt.
7.Sprinkle 1 tsp pepper powder.
8.Add the fried chicken pieces to the pan and toss everything so that the gravy is coated on the chicken.
9.Remove from heat after 2-3 minutes.

Note
If you want gravy for your Chilly Chicken, add 1 cup of water or stock after step 7 and bring it to a slow boil.
To thicken the gravy, dissolve 1 tbsp of Corn Flour in 1/4 cup of warm water and add it to the chilly chicken.

Instant Noodles with Vegetables and Egg

Ingredients
Instant Noodles – 2 packets (Any flavor)
Finely Diced Carrots – 1 large
Frozen green peas -some
Finely Diced Onions – 1 small
Oil – 1 tbsp
Tomato Sauce – 2 tbsp
Egg – 1
Salt – to taste
Pepper – 1/2 tsp

Preparation Method
1.Finely slice onions and carrots. In a saucepan, heat half the amount of water required for cooking the noodles. (Be careful with the amount of water. If you add too much water, the noodles will become mushy.)
2.Add carrots,peas and onions to the saucepan along with the instant noodle seasonings. Cook the vegetables for around 5 minutes. Add the noodles to the pan and continue cooking on medium heat. When the noodles become 3/4th cooked, add the tomato sauce and noodles masala. Mix everything and continue cooking until all water has evaporated. Keep aside.
3.Beat the egg with salt and pepper. Heat oil in another non stick pan and scramble the egg nicely. Add the cooked noodles and veggies to this pan and mix everything well. Remove from heat after 2 minutes.

Sausage Potato Sticks And Award

Ingredients:
Sausage -5
Potato -1
Tomato Chili Sauce -1tsp
soya sauce -1/2tsp
pepper powder -1/2tsp
Cucumber for garnishing -2
Bread crumbs
Egg -1
Salt to taste
Oil frying
Bamboo sticks

Method:
1.Cook Sausage and Potato.
2.Take a bowel and mix Tomato Chili Sauce, soya sauce, pepper powder, Salt.Make a paste of it.
3.Now mix this with Sausage and Potato.And keep it aside for half an hour.
4. Thread one piece of Sausage and Potato onto sticks.
5. First dip this into the egg and then roll it in the bread crumbs.
6. .Deep fry it in oil. Take it out of the oil when it is of a golden brown colour.
7. Garnish with Cucumber.

Gobi Manchurian And Award

Ingredients

4 cup Cauliflower cut
3 tsp Maida
1 Egg
2 tsp Corn flour
1 tsp Red chilli powder
½ tsp Salt
2 pinch Orange red food colour(optional)
1 tomato
1 no Red onion (cut into big dices)
1 nos Green bell pepper/ capsicum (cut into big dices)
1 no Green chilli (minced)
1 tspGinger garlic (minced)
¼ cup Green spring onions (finely chopped)
4 tspTomato chilli ketchup
¼ tsp Salt to taste
3 tsp Oil (for sauteing)
2 cup Oil (for deep frying)
2 stks Coriander leaves (for garnishing)

Instructions

1.Wash the cauliflower florets and put them in hot water for few minutes. Drain the water completely and pat dry with a kitchen towel. Mix maida, corn flour, salt,egg, red chilli powder,. Make a fine paste and add cauliflower and toss in to coat it with the paste. Heat 2 cups of oil and deep fry the cauliflower florets and drain the excess oil with a paper towel. Keep this aside.

2.Now heat 3 tsp of oil in a wide kadai, saute red onions, tomato, ginger garlic, capsicum, green chilli for 4 to 5 minutes, once they turn slightly tender, add the fried cauliflower along with soy sauce, tomato chilli ketchup, and salt. Toss everything for few minutes until the masala becomes dry. Add green onions while sauteing. Garnish with coriander leaves.

CHICKEN NOODLES

INGREDIENTS
150g boneless chicken
1 tbsp soya sauce
1 packet noodles
2tbsp tomato chilli sauce
2-3 green chillies 1 tsp chopped garlic
1tsp pepper powder
1 onion
1 tomato
1 bowl of mixed shredded vegetables like carrots , spring onions,red capsicums and green peas.

METHOD
1.1st boil the chicken using salt and pepper powder and then cut it into long thin stripes 2.Heat oil in a deep pan ,add chopped garlic and sute for a minut.
3. Add all shredded vegetables , salt , black pepper , tomato chilli sauce , soya sauce, green chillies and saute for 5 mins.
4.Now as per instructions of noodles packet boil the noodles ,strain them when cooked fully and add them to the vegetables also add cooked chicken.
5.Toss the noodles well so as to prevent sticking.Cook for 10 mins and stir well.Serve hot with ketchup.

Fish Fried Rice And the Award

Ingredients

King fish - 200 gm
Basmati rice - 1 cup
Onion chopped - 1
Ginger and garlic thinly sliced - 1 1/2 tsp
Green chili slit chopped - 1
Pepper powder – 1/2 tsp
Frozen peas - 1/4 cup
Carrot chopped - 1/4 cup
Soy sauce - 1 tsp
Salt to taste
Butter
Chopped celery
Coriander leafs some

Method

1.Clean and fry the fish pieces with salt and crushed Pepper powder.And cut it into small piece.
2.Wash and soak basmati rice for 30 minutes and drain. Cook the soaked basmati rice with 2 cups of water and set aside.
3.Heat butter in a pan and saute chopped onion, ginger, garlic, green chile,Salt.Cook until soft. Add peas and carrot and saute for another 7-8 minutes , or until it is cooked. Add soy sauce and toss it well.
4.Add the fish and veg combine well.Stir in the cooked rice ,simmer it for 5-8 minutes.
Garnish with chopped celery and Coriander leafes .
