Bread Sausage Upma

Sometimes we want to cook a quick meal for dinner or lunch and we expect it to be delicious too. Bread Upma is that kind of dish which is easy to make and yummy too. And it sometime helps you to get rid of your bread which is sitting in your kitchen for a long time. Here you go…

Ingredients:

Bread - 4 slices
Sausage-2
Carrot frozen-1/4 cup
Peas frozen -1/4 cup
Chopped onion - 1
Tomato - 1
Green Chilly - 2
Minced garlic - 1 tsp
Oil - 1 tbsp
Tomato ketchup-2 tsp
Mustard seeds – 1/2 tsp
Curry leaf-1
Coriander leaves for garnishing
Salt to taste

Method of Preparation:

1. Cut the bread slices into small pieces or according to your preference.
2. Heat oil in a pan and fry Sausage and keep aside.Now add mustard seeds. Once they pop up add minced garlic followed by onions.
3. Saute them till onions get cooked.
4. Now add the chopped tomatoes, Carrot, green, Peas, Curry leaf,chillies and salt. stir well.
5. Let the veg get cooked. Add the bread, Sausage and Tomato ketchup keep on tossing.
6. Bread should get toasted and combined well.
7. Once it is done, remove from heat and garnish with coriander leaves
Serve hot with/without ketchup.

Fish Fried Rice And the Award

Ingredients

King fish - 200 gm
Basmati rice - 1 cup
Onion chopped - 1
Ginger and garlic thinly sliced - 1 1/2 tsp
Green chili slit chopped - 1
Pepper powder – 1/2 tsp
Frozen peas - 1/4 cup
Carrot chopped - 1/4 cup
Soy sauce - 1 tsp
Salt to taste
Butter
Chopped celery
Coriander leafs some

Method

1.Clean and fry the fish pieces with salt and crushed Pepper powder.And cut it into small piece.
2.Wash and soak basmati rice for 30 minutes and drain. Cook the soaked basmati rice with 2 cups of water and set aside.
3.Heat butter in a pan and saute chopped onion, ginger, garlic, green chile,Salt.Cook until soft. Add peas and carrot and saute for another 7-8 minutes , or until it is cooked. Add soy sauce and toss it well.
4.Add the fish and veg combine well.Stir in the cooked rice ,simmer it for 5-8 minutes.
Garnish with chopped celery and Coriander leafes .

Varutharacha Meen Curry (Kerala Style fish curry made in fried coconut)

Ingredients:

Any fleshy fish - 1/2 kg
Pearl onions(Kunjulli) sliced - 4 nos
Tomato-1 big
Curry leaves - 1 stem
Fish Tamarind (kudampuli)- 2to3 pieces(according to ur taste)
Salt - As reqd
Oil - 3 tbsp
To dry roast

Grated coconut -1/2 cup
Fenugreek seeds - 1/4 tbsp
shallot, chopped -3
Ginger, Garlic chopped 1/2 tbsp
1 sprig - Curry leaves
Chilly powder - 1 tbsp
Coriander powder - 1/2 tbsp
Turmeric powder – 1/2 tbsp
Pepper powder -1/4 tbsp
4 tsp of coconut oil

Method:
1.In a pan add oil and dry roast grated coconut along With the ingredients like Fennel seeds, shallot, Ginger, Garlic, Curry leaves. Roast till coconut turns to a light brown color.Now add other ingredients listed, and stir till the masala powders turn a deep colour. Cool the mix and grind it in a mixer grinder.
2.In a deep vessel onions, Tomato and the coconut past,Tamarind and salt. When the paste boils and aroma comes, add fish pieces. Add sufficient water such that the pieces are well immersed in the mix.
3.Allow it to boil in a medium flame and let the gravy thicken.

Curry is ready..

Inji Pachadi


INGREDIENTS

Ginger chopped-2tbsp
Green chilly-2(chopped)
Dry Red chilly-4(cut into small pieces)
Mustard seeds-1/2tsp
Curry Leaves-2 strings
Salt-to taste
Coconut greated-1/2cup
Yogurt -1cup
Coconut oil-1tbsp

PREPARATION

1.In a blender grind the coconut by adding Yogurt to a fine paste.When it is grinded add Green chilly, Ginger and few Mustard seeds.Now gring for a minute.
2.Poure this to a bowel. Heat Oil in a Pan and add mustard seeds ,dry red chilly and curry leaves .Let the mustard seeds splutter.poure this to the pachadi and mix well.Add salt to taste. inji pachadi is ready to serve.Serve with rice.

Chicken Balls


Ingredients

For the covering
Fine Rice Flour – 1 cups
Water – approx 1 cups
Salt – as needed
Oil-1 tsp

For the filling
Cooked Boneless Chicken-250grm(Chopped into small pieces)
Onion - 1 big(Chopped into very fine pieces)
Tomato - 1 medium sliced into small pieces
Green chilly - 1 Chopped into very fine pieces
Garlic - 2 cloves (Chopped into very fine pieces)
Turmeric Powder - 1/4 t spoon
Chilly Powder – 1/2 t spoon
Cooking oil – 2 table spoon
Salt - To taste

Method:

1. First we need to prepare filling. Heat some oil in a pan and fry the onions till light brown in colour add salt to taste. Then add green chilly,garlic and tomato and stir for around 10 minutes.
2. Then add Chilly Powder, Turmeric Powder and stir for around 1 minutes.Then add cooked chicken and mix well. Keep it on low fire for about 10 minutes.Remove from fire and keep it aside.
3.Now we need to make cover. In a deep vessal boil 1 cup of water. When it starts boiling add 1 tsp oil and salt to taste.Add rice flour and keep stirring .Cover with a lid for a minute.Take dough in a plate and knead well.
4.Apply oil to your palms.Make a lemon sized ball of this dough. Keep remaining dough covered. With both hands, flatten ball of dough to make it in a shape of Puri. Thickness should be little thicker than puri. Keep 1tsp chicken filling at the center of this. Bring all edges together at the center and close them at the top.Molde like a balls.
5.Now steam the chicken balls for about 10 minuts.
